How long should a commercial ice machine take to make ice?
A typical commercial cuber takes 3 to 8 minutes per harvest cycle, one sheet of cubes at a time, and a full bin usually builds in 12 to 24 hours of continuous running depending on head size, water temperature, and kitchen heat. Slower than that is not automatically broken, but a cycle stretching past about ten minutes, or a bin that never fills by Friday, means the machine is fighting something.
Nameplate numbers versus your kitchen
Production ratings assume roughly 70-degree air and 50-degree water. A Las Vegas back-of-house running 90-degree afternoons with warm supply water can see production fall 20 percent or more against the nameplate, and that is physics, not a fault. Air-cooled machines feel kitchen heat directly; water-cooled machines are steadier but carry their own costs. Sizing the head for the real kitchen, with a bin big enough to coast through the Friday rush, is covered on the installation and relocation page.
When slow means a fault
Watch the pattern. A cycle time creeping longer week over week points at scale on the evaporator or a condenser loading with grease; both are fixed by cleaning and sanitizing and preventive maintenance visits. A machine that suddenly takes twice as long, or makes hollow cubes late in the day, is fighting water supply, a failing water pump, or low refrigerant, which is a ice machine repair visit, typically in the few-hundreds range for the valley with the price confirmed before work.
Keeping production at spec
Twice-yearly descaling, current water filters, a condenser that gets cleaned with the hood schedule, and a machine placed to breathe rather than ducted into a corner: those four habits keep cycle times at the short end of the range in most valley kitchens. Ice machines recover production dramatically after their first proper cleaning; the before-and-after is usually visible the same day.
If the machine's bin is empty by Friday and refills all weekend, note the cycle length, roughly how long one harvest takes, on the request form. That number tells the desk whether it is a cleaning visit or a repair visit before anyone rolls a truck.
