Why is there slime or pink mold in my ice machine?

Pink slime, black flakes, or a musty smell in a commercial ice machine is biofilm: airborne yeast and bacteria that settle into the cool, wet, food-zone surfaces of the machine and grow. It is common in bars and kitchens rather than a sign of a dirty operation, and it is also exactly what Southern Nevada health inspectors look for, because ice is food and the bin is a food-contact surface.

Why it grows so fast here

The machine offers water, a cool surface, and a constant supply of nutrients from the air: flour dust, yeast from a bakery or bar, grease aerosol from the line. Las Vegas kitchens run high volume in tight spaces, so the air around the machine is loaded. Pink coloration is typically airborne bacteria and yeast; black spots in the bin corners are mold taking hold where the biofilm was never removed. A bar that slices fruit over the ice well feeds it directly.

What actually removes it

Wiping with a sanitizer cloth is maintenance, not removal. A real cleanup is a full cleaning and sanitizing of the food zone: the evaporator, the bin walls, the water curtain, the spray nozzles, and the distribution tube, descaled and sanitized per the manufacturer's procedure. Scale under the biofilm is what lets it re-anchor, so descaling and sanitizing belong in the same visit. After cleanup, keep the scoop outside the bin, never stored in the ice, and wipe the bin surfaces weekly; the sanitizer schedule the manufacturer prints is the minimum, and high-volume kitchens run it more often.

The inspection and safety angle

Inspectors in Southern Nevada write up slime in ice bins and dirty ice-machine interiors as priority violations; a repeat costs real points. Beyond inspections, biofilm protects listeria-class bacteria from sanitizer, which is why it is on the preventive maintenance schedule and not the someday list. Cleaning visits for a slime situation typically run in the few-hundreds range for the valley, and the company doing the work confirms scope and price before starting.

Mention the slime's color and where it shows up, bin corners, dispenser nozzle, or the evaporator itself, on the request form. A photo from the phone does most of the diagnosis, and the sooner the machine is clean, the sooner the ice is boring again.
